Revisit your Goals and Try Being Cheesy!

If you celebrate the Easter season, or if you just enjoy the change of seasons into Spring, you may find it is a time of renewal, rebirth and possibly even a reawakening.  As we head into the middle of April, consider using this time to review any new year resolutions you might have made, or establish some new Spring goals. Refresh your mind and your goals!

One goal I’m going to revisit is my lateness factor. I strive to be on time, but I cram as much into each hour as possible, and it rarely seems to work for me.  This is stressful, and that’s not good.

So, starting today, I’m going to plan to be 10 minutes early for every appointment (yes, even my 7:45 am networking meeting…).  I’ll take work with me, and fill in the time after I arrive at my appointment, if I’m early.

Stress can be very damaging to our health – body and mind – and by being early, I’ll arrive calm, I can breathe, and I can relax.  This will hopefully help my adrenals stay calm too!

Think about the resolutions you made a few months ago, or develop some new springtime goals!  Divide them into steps you will be able to accomplish, write them down, and chart your progress.  Be sure to reward yourself when you accomplish a step or the entire goal – treat yourself for your hard work!

And, here’s one last delicious non-meat recipe - Cheesy Fish Bake.  It’s a family favorite, it’s full of good nourishing ingredients, and it’s really easy to make!

Cheesy Fish Bake – serves 4

3 tablespoons mayonnaise or Greek yogurt

2 teaspoons Worcestershire sauce

1 tablespoon minced onion (or more, if you prefer)

1 teaspoon Dijon mustard

2 teaspoons sherry extract or real sherry

2 ounces shredded Cheddar cheese

2 ounces shredded Mozzarella cheese (you can really use any kind of cheese)

12 ounces cooked, flaked fish, like scrod, haddock or crabmeat.

Your favorite seasonings – I like sea salt, oregano, garlic powder or minced garlic and

            Old Bay seasoning

Preheat oven to 350 degrees.  In a medium bowl, combine all ingredients except fish.  Mix well. Stir in fish.  Grease a 1-quart baking dish and add mixture. Sprinkle with additional Old Bay seasoning or paprika. Bake, uncovered, 25 minutes.
