Energy Balls as Lent Moves Along

This week’s recipe for Lent is a new one for me, and it’s fun and delicious. 

I recently became aware of our local Harrisburg Salvation Army.  My business group, Professional Referral Exchange, assisted the Salvation Army in an Outreach Project last year, and I attended my first Shoe Strut, a Salvation Army fundraising event.  While there, I bought a delightful cookbook produced by the Salvation Army’s Kids in the Kitchen nutrition program.  This recipe comes from that cookbook.    

Energy Balls are great for kids and adults alike.  Try some as we move from the doldrums of winter into the life of spring!

Energy Balls

Ingredients

½ cup peanut butter (or any nut butter)

1/3 cup honey

1 cup oats

¾ cup shredded coconut

¼ cup chia seed

2 tsp. vanilla

½ cup dried fruit and/or mini chocolate chips (I like carob chips – real chocolate)

Directions

Mix together peanut butter, honey and vanilla.  Add dry ingredients.  Mix well.  Refrigerate for 30 minutes.  Roll into balls.  Makes 8 servings (16 balls).

My addition – This recipe can be a hearty breakfast, too, not just a good snack.  Put the mixture into a small baking dish to keep in the fridge.  Spoon some into a bowl, add about a half cup of Greek yogurt, sprinkle on some spices – cinnamon, nutmeg, ginger, ground cloves.  You can even add some fresh or frozen berries.  Enjoy!
