The season that starts the school year often throws families into a panic as they realize homework, sports, school meetings and some play time all have to get done in one night. What about food? Maybe you are making breakfast, packing lunches, and then trying to cook dinner? Yikes!
Two recent clients and friends shared the recipe below. Try it! It will provide a quick, healthy snack to keep you and your family moving and nourished through all the school and leisure activities! Thanks to Connie Milchling and Linda Gilgore for sharing this recipe!
Almond and Chia Energy Bites
1 1/3 cup almonds (about 7 ounces)
4 tablespoons raw cacao powder (or try cacao nibs)
2 tablespoons coconut oil
14 ounces Medjool dates (about 20 ounces)
2 tablespoons almond butter (or any type of nut butter)
1 tablespoons chia seeds
Put almonds in a food processor and pulse until nicely crushed. Pit dates (or buy pitted ones) and add them and all the other ingredients, plus 2 tablespoons water to the food processor. Blend until well mixed and sticky.
Roll into balls and freeze for one hour to set. Store in refrigerator in airtight container. Makes about 20 balls.
